KHATAM, Nov. 13 (MNA) – The number of pistachio factories in Khatam County, Yazd province, has been on the rise in recent years. While green pistachios are delicious enough nuts on their own, many prefer them salted and processed. After harvesting, the pistachios are transferred to factories for processing, during which the external soft shells are removed and the moisture is decreased.
